Beef Stroganoff, the ultimate 60’s throwback comfort recipe, smothered in a creamy mushroom gravy made in an easy 20 minutes.

Ingredients
1 pkgBeef Stroganoff Seasoning (Pack of 3)
1 3⁄4 cups water
2 tbsp oil
1 lb (450 g) lean ground beef or beef strips
2 cups sliced mushrooms
1 cup 2% plain Greek yogurt or sour cream
1 tsp Worcestershire sauce
6 cups cooked egg noodles
Sea Salt, if desired
Black Pepper, if desired
Preparation
Combine seasoning with water. Set aside.
Heat oil in Sauté Pan or large fry pan over medium-high heat. Brown beef. Remove from pan.
Add mushrooms to pan and brown.
Return beef and any juices to pan, then stir in reserved seasoning mixture. Bring to a boil, reduce heat, and simmer for 3 min.
Remove from heat and stir in Greek yogurt and Worcestershire sauce.
Serve over cooked egg noodles. Season to taste with salt and pepper.

Ingredients
1 tbsp oil
1 lb (450 g) boneless, skinless chicken thighs
Sea Salt, to taste
Black Pepper, to taste

3 tbsp tomato paste
1 1⁄2 cups water
1⁄4 cup half & half cream (10%)
4 cups baby spinach
Preparation
In a Sauté Pan, heat oil over medium-high heat. Season chicken with salt and pepper; add to pan. Cook until lightly browned, about 3 min per side.
Meanwhile, whisk together seasoning, tomato paste, and water. Add to pan once chicken has browned. Reduce heat; stir to coat, scraping up any bits from the pan.
Cover; simmer, stirring occasionally, until chicken is cooked through, about 5 min.
Uncover and stir in cream. Add spinach, a handful at a time, stirring until wilted.

Ingredients
1 lb (450 g) lean ground beef
1 pkgBeef Stroganoff Seasoning (Pack of 3)
1 tbsp water
1⁄4 cup light sour cream
1 tbsp Dijon mustard
1⁄2 tbsp sugar or honey
Preparation
In large bowl, using a fork, combine ground beef, seasoning, and water. Form into 16 meatballs (about a scant 2 tbsp each).
Spread in a single layer in Multipurpose Steamer or Round Steamer (it’s OK if they touch). Cover and microwave on high, 4 min or until cooked. Uncover; let sit 1 min before serving.
Meanwhile, prepare dipping sauce. In a small bowl, whisk together sour cream, mustard, and sugar.
Serve meatballs with sauce for dipping.

2 large eggs, beaten
1 cup milk, your choice
2 slices bread, crumbled or ½ cup dry breadcrumbs
1 pkgBeef Stroganoff Seasoning (Pack of 3)orRotisserie Chicken Seasoning (Pack of 3)
2 lbs (900 g) lean ground pork, chicken, turkey or beef
1 tbsp vegetable oil
6 cups sliced mushrooms
1 can (28 oz/385 ml) non-fat evaporated milk
1 cup water or beef broth
1 tbspLemon Dilly Dip Mix
1⁄3 cup cold water
3 tbsp all-purpose flour
1 tbsp lemon juice
Preparation
Preheat oven to 375° F (190° C). Line Sheet Pan with Sheet Pan Liner.
Combine eggs, milk, breadcrumbs, and seasoning in a large bowl. Form into 32 meatballs. Arrange on pan and bake 15 min, then transfer to a slow cooker.
Meanwhile, place oil and mushrooms into Round or Multipurpose Steamer. Cover and microwave on high 5 min, or until tender.
Add mushrooms, evaporated milk, water or broth, and Lemon Dilly Dip Mix to slow cooker. Cover and cook on low for 4 hours, or until bubbling.
Whisk cold water and flour and stir into slow cooker. Cover and continue to cook on high for 20 minutes, or until thickened. Stir in lemon juice and serve.
