Smokin' BBQ Sauce Mix

  • Ingredients

    1 pkgSmokin' BBQ Sauce Mix (Pack of 3)

    1 1⁄2 cups ketchup

    1 cup unsweetened apple sauce

    1 cup water

    Preparation

    In a Multipurpose Pot, combine mix, ketchup, apple sauce, and water.

    Partially cover; over medium heat, cook sauce 15 min for flavours to blend. Stir often.

    Liberally brush sauce on grilled meat near the end of cooking. Refrigerate sauce up to 1 week.

    2 tbspBBQ Chicken & Rib Rub

    2 tbsp oil + more for brushing

    1 lb (450 g) boneless, skinless chicken breasts

    2 bell peppers

    1 small red onion

    1 zucchini

    1⁄2 cupSmokin’ BBQ Sauce, divided

    Preparation

    Preheat grill to medium-high heat. Lightly brush with oil.

    Chop chicken, peppers, onion, and zucchini into bite-size pieces. In a large bowl, toss chicken and vegetables with rub and oil. Thread onto Grill Boss Skewers.

    Grill skewers with lid closed 4–6 min, until lightly charred. Flip skewers and cook 2–3 min. Baste with 1⁄2 the sauce and cook additional 2–3 min, until chicken is cooked through.

    Remove from grill; baste skewers with remaining sauce before serving.

    1⁄2 pkgSmokin' BBQ Sauce Mix (Pack of 3), about 1/4 cup

    3 tbsp oil, divided

    1 tbsp apple cider vinegar

    4 bone-in, centre-cut pork loin chops, about 1 lb (450 g)

    1 red onion

    1 red bell pepper

    Sea Salt, to taste

    Black Pepper, to taste

    Toppings (optional): Smokin’ BBQ Sauce, chopped fresh parsley or cilantro

    Preparation

    In a large bowl, combine mix with 2 tbsp oil and vinegar. Add pork chops; evenly coat with sauce. If you have extra time, refrigerate and marinate for 15 min or overnight.

    Preheat grill to medium-high heat.

    Cut onion into thick rings. Cut pepper into thick, chunky pieces.

    Place a Sheet Pan Liner on a Sheet Pan. Add cut veggies; drizzle with remaining 1 tbsp oil and season with salt and pepper. Push to one half of the pan, add chops, and head to the grill.

    Add chops, peppers, and onion (remove Sheet Pan Liner) to preheated grill. Sear chops, 2 min per side, then reduce heat to medium. Flip pork and veggies often until pork is cooked through and veggies are lightly charred, about 8–10 min. Remove food when cooked and place on Sheet Pan. Sprinkle with toppings, as desired.

    Tips

    1 tbspFajita SeasoningorTaco Seasoning

    1⁄4 cupPesto Sauce, prepared

    4 buns, split and toasted

    1⁄4 cupSmokin’ BBQ Sauce, or store-bought BBQ sauce

    4 cups mixed leafy greens

    Topping Suggestions (optional): grilled peppers, sliced tomatoes and cucumbers, pickles, sliced cheddar or havarti, grilled onions, sliced avocado.

    Preparation

    Combine seasoning and oil in a bowl or resealable bag. Add chicken; coat well. Let marinate in fridge for at least 15 minutes or overnight.

    Skewer 3 chicken thighs horizontally on 3 metal skewers. Repeat with the remaining chicken and skewers. Grill over medium heat about 3–5 minutes per side, or until lightly charred and cooked through.

    Place on a platter and brush with finishing sauce. Serve on warm buns spread with Smokin’ BBQ Sauce, leafy greens, and your favourite toppings.
